On an ordinary Thursday in 2015, fiddling around the kitchen during our newlywed days, I accidentally stumbled upon this salad dressing that would change our lives. Ok, so that’s a little over the top, BUT it is the reason my husband grew to like greens and why my kids are salad fiends. They ask for thirds every time I make it. And then raise the giant glass salad bowl to their faces to slurp up the drips. Because we love this dressing so much, I haven’t bought a bottle of dressing from the store ever since. A win for budget and lowering waste.
Here it is! Let me know if you enjoy it, or if we’re just really strange people getting way too excited about salad.
Ingredients:
- 1/2 C olive oil
- 1/8 C apple cider vinegar
- 1 t honey or sugar
- salt to taste (I usually add a big pinch then taste again by dipping a leaf in after it’s all mixed up)
- a few turns of cracked pepper
- 2 minced garlic cloves
Directions:
Emulsify all ingredients with a fork until well blended. Makes enough for one very large salad, or several small. Store extra in a glass jar in the fridge for up to a week.
Variations:
- 1 T tahini for Mediterranean flavor
- 1 t mustard for honey mustard
- try a different vinegar
- swap the vinegar for orange, lime, or lemon juice for something bright and summery
